Walnut And Cheese Burgers
175 g/6 oz shelled walnuts
50 g/2 oz wholemeal bread, cubed
100 g/4 oz Cheddar cheese, grated
1 onion, peeled and grated
salt
freshly ground black pepper

Put the nuts in a blender, reserving 50 g/2 oz for the coating. Add the bread and grind coarsely. Transfer to a bowl, add the cheese, onion, and salt and pepper to taste, and stir well. Beat the egg with the tomato purée. Add to the nut mixture and stir Instil well combined.
Divide the mixture into 4 on a lightly floured surface. Shape into burgers, about 8 cm/31/2 inches in diameter and 1 cm/1/2 inch thick. Chop the re- served and press into both sides of the burgers.
Heat a little oil in a frying pan, add the burgers and fry for about 5 minutes until browned on both sides, turning once. Alternatively, place the burgers on a lightly greased baking sheet and bake in a preheated moderately hot oven (200 °C/400 °F, Gas Mark 6) for 20 minutes until browned.
Serve hot or cold, garnished with tomatoes and watercress.
