Stir Fried Vegetables With Camembert


2 tablespoons polyunsaturated vegetable oil
5 cm/2 inch piece fresh root ginger, peeled and
chopped
1 onion, peeled and sliced
3 carrots, scraped and sliced
225 g/8 oz white cabbage, shredded I clove garlic, peeled and crushed
1 red pepper, cored, dcseeded and sliced
3 heads of chicory, sliced
3 tablespoons soy sauce
2 tablespoons sherry
225 g/8 07 bean-sprouts
175 g/6 oz Camembert cheese, cubed
50 g/2 oz unsalted peanuts


Heat the oil in a large wok or frying pan and stir- fry the ginger, onion and carrots for 5 minutes. Add the cabbage and garlic and stir-fry for 5 minutes. Add the red pepper and chicory and stir- fry for 3 minutes.


Stir in the soy sauce and sherry, cover and cook for 5 minutes, adding the bean-sprouts 1 minute before the end of the cookins,e. time. Stir in the cheese and nuts, heat through and serve. SERVES 4
