Spinach Fried With Garlic


2 tablespoons polyunsaturated vegetable oil
1 large onion, peeled and chopped
1 large clove garlic, peeled and crushed
100 g/4 oz lean bacon, derinded and chopped
(optional)
450 g/1 lb spinach leaves
1 tablespoon lemon juice
salt
freshly ground black pepper


Heat the oil in a large pan. Add the onion, garlic and bacon (if using), and fry gently for 5 minutes, stirring frequently.


Wash the spinach thoroughly, then add to the pan with only the water clinging to the leaves. Add the lemon juice and salt and pepper to taste. Fry gently for 3 to 5 minutes until the spinach is just tender but still bright green, stirring constantly. Check the seasoning and serve at once. SERVES 4
