Spiced Red Cabbage


I red cabbage, trimmed and sliced
1 large cooking apple, peeled, cored and thickly
sliced
1 onion, peeled and sliced
300 ml/1/2 pint wine vinegar
1 teaspoon mixed spice


Place the cabbage in a flameproof casserole and arrange the apple and onion slices on top.


Add the vinegar and sprinkle over the mixed spice. Add just enough water to cover the cabbage completely.


Bring to the boil, cover and simmer for about 30 minutes. Serve hot.
