Nest Of Baby Vegetables
12 baby carrots, washed
12 baby turnips, washed
50 g/2 or mangetout, topped and tailed
100 g/4 oz French beans, topped and tailed
8 button onions, peeled
8 radishes, washed
50 g/2 or polyunsaturated margarine
4 tablespoons white wine
4 strips lemon peel
4 teaspoons chopped fresh herbs (e.g. chervil,
chives, mint)
salt
freshly ground black pepper
Fold 8 sheets of greaseproof paper in half, and cut a semi-circle of 15 cm/6 inch radius through each so that, when opened out, you have 8 x 30 cm/ 12 inch rounds of paper. Place the circles together in pairs so that you have 4 double-thick circles.
Divide all of the ingredients between the 4 circles, arranging the food on one half of each circle only, and season well with salt and pepper. Fold the free half over to make a parcel rather like ail apple turnover. Fold the edges of the layers of paper over twice together, twisting and pressing hard to make an air-tight seal.
Lay the parcels inside a steamer. Cover with a tight-fitting lid and steam over boiling water for 8 to 10 minutes. Serve at once.
