Leeks Nicoise
6 leeks, trimmed and cleaned
1 x 200 g/7 oz can tomatoes, chopped
1 teaspoon chopped basil
1 clove garlic, peeled and crushed
salt
freshly ground black pepper
chopped parsley, to garnish
Put the leeks in a deep pan. Add the tomatoes with their juice, the chopped basil and the garlic. Season to taste with salt and pepper. Bring to the boil, lower the heat and cover. Simmer for about 20 minutes, or until the leeks are tender, stirring occasionally.
Sprinkle over the chopped parsley and serve immediately while hot.
