June Peas


1 kg/2 lb shelled fresh peas
hunch of spring onions, trimmed and sliced
8 Cos lettuce leaves, washed and shredded
2-3 mint sprigs
1 tablespoon chopped parsley
pinch of caster sugar
25 g/1 oz polyunsaturated margarine
1 clove garlic, peeled and crushed
salt
freshly ground black pepper


Place a piece of wet greaseproof paper on the base of a steamer compartment. Top with peas, spring onions, lettuce, mint, parsley, sugar, margarine and garlic. Season well with salt and pepper.


Cover with a tight-fitting lid and steam over boiling water for 1 hour. Check the liquid level frequently and add more water if necessary.


After 1 hour, check that the peas are tender; if they are, serve at once.
