French Style Beans And Carrots
25 g/1 or polyunsaturated margarine
1 onion, peeled and chopped
8 lettuce leaves, shredded
225 g/8 or carrots, peeled and cut into
matchsticks
225 g/8 or green beans
salt
freshly ground black pepper
2 tablespoons water
chopped mixed herbs, to garnish
Melt the margarine in a pan and sauté the onion for 2 minutes. Add the lettuce and carrots and cook for 2 minutes, then add the beans, salt and pepper and continue cooking for 5 minutes with the lid on the pan.
Stir its the water, cover and cook for 15 minutes. Transfer to a warns serving dish and garnish with the herbs (if using).
