Danish Red Cabbage
1 tablespoon polyunsaturated vegetable oil
1 medium red cabbage, trimmed and finely
shredded
1 large onion, peeled and finely sliced
1 large cooking apple, skinned, cored and sliced
1 tablespoon caraway seeds
2 tablespoons wine vinegar
salt
freshly ground black pepper
2 tablespoons vegetable stock
chopped parsley, to garnish
Heat the oil in a large pan. Add the cabbage, onion, apple, caraway seeds, vinegar, salt, pepper and stock. Stir well and cover with a lid.
Allow to cook gently for 40 to 45 minutes, stirring or shaking from time to time. Garnish decoratively with parsley.
