Courgettes Lyonnaise
1 clove garlic, peeled and crushed
100 g/4 07 onion, peeled and chopped
150 ml/4 pint chicken or vegetable stock
salt
450.g/1 lb courgettes, sliced
freshly ground black pepper
Stir the garlic and onion into the stock. Add salt and bring to the boil.
Add the courgettes, cover and simmer for It) to 15 minutes until tender. 'Taste and adjust the seasoning. Serve hot or cold.
