Courgettes A La Grecque
2 tablespoons sunflower oil
1 onion, peeled and sliced
1-2 cloves garlic, peeled and crushed
750 g/1/2 lb courgettes, peeled and sliced
1 tablespoon wine vinegar
2 tablespoons tomato purée
6 tablespoons water
1-2 teaspoons brown sugar
1 teaspoon dried thyme
salt
freshly ground black pepper
Heat the oil and sauté the onion for 3 minutes. Add the garlic and courgettes and cook for 5 minutes with the lid on; toss occasionally.
Add the vinegar, tomato purée, water, sugar, thyme, salt and pepper. Stir, bring to the boil, cover and simmer for 15 minutes. Transfer to a serving dish and serve hot or cold.
