Celery With Orange And Nuts


1 celery head, trimmed and cut into 5 cm/2 inch
lengths, leaves reserved
finely grated rind of 1/2 orange
juice of 1 orange
1 orange, peel and pith removed and divided
into segments
25 g/1 oz sultanas
25 g/1 oz walnuts
freshly ground black pepper


Put the celery and leaves in a baking dish. Add the orange rind, juice and segments, then sprinkle with the sultanas, the walnuts and salt and pepper to taste.


Cover and bake in a preheated moderate oven (180CI350 °F, Gas Mark 4) for 30 to 40 minutes until the celery is just tender.


Alternatively, put all the ingredients in a large saucepan. Cover and cook gently for 15 to 20 minutes until just tender, stirring occasionally. If necessary, add a little water towards the end of cooking to moisten it.


Taste and adjust the seasoning. Serve hot. SERVES 4
