Cabbage Braised With Apple And Yogurt


450 g/1 lb cabbage, shredded
1 onion, peeled and grated
1 cooking apple, peeled, cored and grated
salt
freshly ground white pepper
150 ml/1/4 pint plain low-fist yogurt
pinch of grated nutmeg


Put half the cabbage in a baking dish. Sprinkle with half the onion and apple and salt and pepper to taste. Spoon over half the yogurt.


Acid the remaining cabbage, then top with the remaining apple and onion and sprinkle with salt and pepper to taste. Spoon over the remaining yogurt and sprinkle with the nutmeg.


Bake in a preheated moderately hot oven (190 °C/375 °F, Gas Mark 5) for about 2(1 minutes


until the cabbage is just tender. Serve hot. SERVES 4
