Broccoli Au Gratin
1 medium onion, peeled and sliced
1 green pepper, cored, deseeded and sliced
1 kg/2 lb broccoli
2 tablespoons cornflour
600 ml/1 pint skimmed milk
100 g/4 oz Cheddar cheese, grated
pinch of grated nutmeg
salt
freshly ground black pepper
Place the onion, pepper and broccoli in a saucepan of boiling water. Cover and cook for about 15 minutes until tender.
Mix the cornflour with the skimmed milk. Pour into a saucepan and heat gently, stirring. Add 50 g/2 oz of the cheese and, when thickened, add the nutmeg and salt and pepper to taste.
Transfer the drained broccoli and pepper mixture to a heated gratin dish and pour over the sauce. Sprinkle with the remaining cheese and place under a hot grill until the cheese melts.
