Baked Potato And Onion Layer
4 medium potatoes, peeled and finely sliced
4 medium onions, peeled and finely sliced
salt
freshly ground black pepper
1 clove garlic, peeled and crushed
1-2 teaspoons chopped fresh sage or
1/2-1 teaspoon dried sage
about 175 ml/6 fl oz skimmed milk
Arrange the potato and onion slices in alternate layers in a shallow ovenproof dish, sprinkling salt, pepper, garlic and sage between each layer.
Pour over the skimmed milk €” it should come about two-thirds of the way up the sides. Cover and bake in a preheated moderately hot oven (200 °C/400 °F, Gas Mark 6) for about 50 minutes or until the potatoes are cooked.
Uncover to allow the top to brown, then cook for a further` 10 minutes. If the dish becomes too dry during cooking add a little more milk, but the finished dish should have absorbed all the milk. SERVES 4
