Baked Onions


4 large onions, peeled and halved
75 g/3 oz wholemeal breadcrumbs
4 dessertspoons crunchy peanut butter


Scoop out the centres of the onions and chop finely. Mix with the breadcrumbs and then combine with the peanut butter.


Spoon the mixture into the onion cavities. Reform the onions and wrap in foil. Cook in a preheated moderately hot oven (200C/400 °F, Gas Mark 6) for about 1 hour until tender.
