Avocado Popovers


8 lettuce leaves
1 large avocado, stoned, peeled and cut into
strips
juice of 1 Jenson
2 slices lean smoked ham, cut into strips
bonds of 'spring onions, trimmed and finely
sliced
salt
freshly ground black pepper
pared rind of 1/2 lemon, cut into thin strips and
blanched, to garnish
Lemon sauce:
3 egg yolks
3 tablespoons lemon juice
salt
freshly ground black pepper
100 g/4 oz polyunsaturated margarine, melted


Steam the lettuce leaves over boiling water for IS to 20 seconds. Refresh in ice-cold water.


Mix the avocado, liamm juice, ham and spring onion in a bowl. Season with salt and pepper. Divide the avocado mixture between each lettuce leaf and wrap tightly. Lay side by side in a steamer. Cover with a tight-fitting lid and steam over boiling water for 5 minutes.


Meanwhile, make the sauce. Place the egg yolks and lemon juice its a blender or food processor. Season well with salt and ',sipper and blend for a few seconds. With the machine running, gradually add the melted margarine until the sauce is thick and light. Taste and adjust the seasoning.


Flood the base of 4 individual plates with the lemon sauce. Top with the hot avocado popovers and garnish with thc thin strips of blanched lemon rind. Serve immediately.
