Pork Spare Ribs Soup


450 g/1 lb lean pork spare ribs
1 tablespoon polyunsaturated vegetable oil
2 teaspoons shredded root ginger
1 clove garlic, peeled and sliced
2 spring onions, chopped
900 ml/11/2 pints beef stock
1 teaspoon salt
2 tomatoes, skinned and diced
225 g/8 oz bean-sprouts
Cut the spare ribs into 2.5 cm/1 inch pieces.


Heat the oil in a pan, add the spare ribs and fry for 5 minutes until golden brown. Add the ginger, garlic and spring onions and cook for 2 minutes. Add the stock and bring to the boil. Cover and simmer for l hour or until the meat is tender.


Add the remaining ingredients and cook for 1 minute. Serve hot.


SERVES 4 to 6
