Ham And Mushroom Soup


25 g/1 oz skimmed milk pdwder
300 ml/1/2 pint water
25 g/l oz poly-unsaturated margarine
25 g/1 us plain flour
300 nil/1/2 pint chicken stock
100 g/4 oz mushrooms, thinly sliced
100 g/4 oz cooked ham, diced
salt
freshly ground black pepper


Stir the skinimed milk powder into the water until dissolved.


Place the milk, margarine, flour and stock in a saucepan and whisk continuously over moderate heat until the sauce thickens.


Add the mushrooms and ham, season to taste and simmer for a further 4 to 5 minutes. SERVES 4
