White Sauce


1 1/2 teaspoons polyunsaturated margarine
25 g/1 oz plain unbleached white flour
300 ml/1/2 pint skimmed milk
salt
freshly ground black pepper


Melt the margarine in a saucepan and stir in the flour. Cook, stirring, for 1 minute and then gradually add the milk. Keep on stirring all the time to prevent lumps. Bring to the boil and simmer for 2 minutes, stirring until smooth, and season to taste.


MAKES 300 ml/1/2 pint
