Onion Yogurt Sauce
15 g/1/2 oz polyunsaturated margarine
1 small onion, peeled and finely chopped
1/4 teaspoon paprika
1/4 teaspoon ground coriander
salt
freshly ground black pepper
150 ml/1/4 pint plain low-fat yogurt
1 tablespoon snipped chives (optional)
Melt the margarine in a small pan. Add the onion and cook gently until softened, about 6 to 8 minutes.
Stir in the paprika, coriander, and salt and pepper to taste, blending well.
Allow to cool slightly then stir in the yogurt and chives, if using. Mix well to blend and serve at once.
MAKES about 200 ml/7 oz
