Lemon Yogurt Dressing
150 ml/1/4 pint plain low-fat yogurt
finely grated rind and juice of 1/2 lemon
1 tablespoon chopped parsley
1 tablespoon snipped chives
1 tablespoon chopped thyme, mint, watercress
or sorrel
salt
freshly ground black pepper
Put all the ingredients in a bowl and beat well. Taste and adjust the seasoning, then pour over the salad just before serving.
