Herb Vinaigrette
175 ml/6 fl oz olive oil 2 tablespoons vinegar
2 tablespoons lemon juice
1 clove garlic, peeled and crushed
1/2 teaspoon mustard
2 tablespoons chopped mixed herbs (e.g. mint,
parsley, chervil, chives and thyme)
salt
freshly ground black pepper
Put all the ingredients in a screw-topped jar, adding salt and pepper to taste. Shake well to blend before serving.
