Green Herb Dressing


25 g/1 oz parsley
15 g/1/2 oz mint
15 g/1/2 oz snipped chives
1 clove garlic, peeled and chopped
150 g/5 oz plaits low-fat yogurt
120 ml/4 fl oz polyunsaturated vegetable oil
juice of 1/2 lemon
salt
freshly ground black pepper


Rinse the bunches of parsley and mint under running water and pat dry. Remove the stalks and place the leaves in a blender with the remaining ingredients, seasoning with 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Blend for 2 to 3 minutes.


Store in an airtight container in the refrigerator. Shake well to blend before serving.


MAKES 300 ml/1/2 pint
