Blender Mayonnaise I
1 egg
salt
freshly ground black pepper
1/2 teaspoon mustard powder
4 tablespoons Olive oil
2 tablespoons lemon juice
Place the egg, salt and pepper and mustard in a blender or food processor and blend on medium speed for a few seconds. Remove the centre cap from the lid and add the oil, drop by drop, with the motor still running on low speed.
Gradually add the lemon juice until the mixture is thick. Serve at once or keep for up to 1 week in a screw-topped jar in the refrigerator.
