Winter Salad
1 tablespoon sesame seeds
1 carrot, scraped and finely grated
75 g/3 oz mushrooms, wiped and finely sliced
yp g/2 oz cooked beetroot, peeled and cubed
1/4 small onion, peeled and finely chopped
1 large parsley sprig, finely chopped
1/4 bunch watercress, chopped
1/2 tablespoons balsamic vinegar (available from
speciality delicatessens)
Too the sesame seeds in a thick frying pan over a moderate heat until a light golden colour. Cool on absorbent ki when paper. Then mix in a salad bowl with all the other ingredients and serve.
