Warm Potato Salad With Thyme


750 g/1 1/2 lb new potatoes, washed and scrubbed
salt
freshly ground black pepper
grated rind and juice of 1 lemon
1/2 teaspoon light brown sugar
3 spring onions, trimmed and minced
3 tablespoons olive oil
1 tablespoon chopped thyme
1 clove garlic, peeled and crushed


Cook the new potatoes in boiling salted water until just tender about 8 to 10 minutes.


Meanwhile, put the lemon rind and juice, brown sugar, spring onions, olive oil, thyme and garlic into a shallow pan, and heat through until the mixture is just bubbling. Season to taste.


Drain the cooked new potatoes thoroughly and toss immediately in the prepared dressing. Leave to stand for 4 to 5 minutes to give the potatoes the chance to absorb the flavour of the dressing, and then serve while still warm
