Tomato And Mozarella Salad
450 g/1 lb tomatoes, skinned and thinly sliced
225 g/8 oz Mozzarella cheese, thinly sliced
salt
freshly ground black pepper
3-4 teaspoons balsamic vinegar (available from
speciality delicatessens)
1 1/2 tablespoons chopped basil
Lay the sliced tomatoes on one half of a flat serving dish and the cheese on the other half. Season the tomatoes with salt and black pepper, the Mozzarella with pepper only. Pour over the vinegar and scatter the chopped basil over all. Allow the salad to stand for a little time before serving.
