Tomato And Leek Salad
450 g/1 lb tomatoes, sliced
100 g/4 or leeks, washed and thinly sliced
4 ablespoons honey and lemon dressing
1 tablespoon chopped parsley
Arrange the tomatoes and leeks in layers in a shallow serving dish, finishing with leeks. Pour over the dressing evenly and sprinkle with the parsley. SERVES 4
