Tomato And Basil Salad
450 g/1 lb Marmand tomatoes
salt
freshly ground black pepper
3 tablespoons olive oil
2 tablespoons chopped basil
Slice the tomatoes thinly and lay them in a shallow serving dish, sprinkling each layer with salt and pepper. Pour over the oil and sprinkle with basil. Marmand tomatoes are the large round variety, often called Mediterranean tomatoes. The basil and the olive oil greatly enhance the flavour of the tomatoes in this delicious salad. SERVES 4
