Spring Green Salad
4 tablespoons olive oil
2 teaspoons soy sauce
1 tablespoon lemon juice
2 cloves garlic, peeled and crushed
salt
freshly ground black pepper
3 celery stalks
1/2 x 200 g/7 oz can sweetcorn, drained
2 tablespoons chopped parsley
Shred the spring greens finely and place in a mixing bowl. Mix together the oil, soy sauce, lemon juice, garlic, and salt and pepper to taste and pour over the greens. Mix thoroughly and leave to marinate for 1 hour
