Spinach And Onion Salad


750 g/l1/2 lb spinach, washed and trimmed
2 tablespoons olive oil
1 large onion, peeled and chopped
2 cloves garlic, peeled and crushed
salt
freshly ground black pepper
15(1 ml/1/4 pint low-fat cream
grated nutmeg


Cook the spinach in a large pan, with just the water clinging to the leaves after washing, about 5 minutes. Drain thoroughly and chop.


Heat the oil in a pan, add the onion and fry until softened. Add. the garlic, spinach, and salt and pepper to taste, and heat through.


Season the cream to taste with nutmeg and pepper. Pour over the spinach and mix well. Leave to cool, then transfer to a salad bowl.
