Red Cabbage And Apple Salad
350 g/12 oz red cabbage
1 small leek, well washed
6 tablespoons vinaigrette dressing
3 dessert apples
Finely shred the cabbage, and thinly slice the leek. Place in a salad bowl, add the dressing and toss thoroughly. Leave to marinate for 1 hour, tossing occasionally.
Core the apples and slice thinly. Add to the bowl and toss again just before serving.
