Pasta Salad With Apple, Avocado And Celery


225 g/8 oz pasta shapes (e.g. bows, rings,
wheels, shells, twists or bows)
1 avocado, peeled, stoned and sliced
1 red dessert apple, cored and sliced
2 teaspoons lemon juice
3 celery stalks, scrubbed and chopped
4 tablespoons French dressing
salt
freshly ground black pepper


Cook the pasta in a pan of boiling salted water until tender or 'al dente', according to the packet instructions. Drain and refresh under cold water.


Mix the avocado and apple slices with the lemon juice to prevent browning. Place the cooked pasta, avocado and apple, celery, dressing, and salt and pepper to taste in a serving bowl. Toss gently to mix before serving.
