Mushroom And Bean Shoot Salad
350 g/12 oz button mushrooms, wiped and
quartered
6 tablespoons vinaigrette dressing
225 g/8 oz bean-shoots
1 red pepper, cored, deseeded and finely sliced
Place the mushrooms in a salad bowl, add the dressing and toss well. Leave to marinate for 1 hour, stirring occasionally. Add the bean-shoots and pepper. Toss thoroughly before serving.
