Mixed Vegetable Salad
4 medium waxy potatoes, peeled, cooked and diced
1 large celery stalk, finely chopped
2 carrots, scrubbed and grated
1 small onion, peeled and finely chopped 1/2 small white cabbage, cored and shredded
2 tablespoons chopped pickled gherkins
8 black olives, stoned and chopped
3 tablespoons vinaigrette dressing
2 tablespoons chopped parsley, to garnish
Put all the prepared ingredients in a salad bowl, pour over the vinaigrette dressing and toss well. Sprinkle with chopped parsley before serving. SERVES 6
