Mixed Red And Green Salad


1 round lettuce, inner leaves only
25 g/1 oz tender spinach, cut in thinnest possible
strips
1 small head radicchio, when available, cut in
squares
25 g/1 oz macho (corn salad, lambs' lettuce),
trimmed
Dressing:
1 tablespoon white wine vinegar
1/2 tablespoon lemon juice
3 tablespoons sunflower seed oil
sea salt
freshly ground black pepper


Lay the lettuce leaves in a salad bowl and scatter the strips of spinach over them. Lay the red squares of radicchio over the spinach, and the individual leaves of niacin, (corn salad) over all. Mix the dressing in a small bowl. Before serving, mix the dressing again, pour over the salad, and toss lightly.
