Melon,tomato And Kiwi Vinagrette
2 Ogen or Charentais melons
4 tomatoes, skinned
3 kiwi fruit, peeled and sliced
I tablespoon chopped mixed herbs (e.g. chives,
mint, parsley)
4 tablespoons honey and lemon dressing
2 tablespoons pumpkin seeds (optional)
Cut the melons in half and discard the seeds. Scoop the flesh into balls, using a melon bailer, or cut into cubes; reserve the shells. Cut each tomato into 8 wedges and discard the seeds.
Place the melon in a bowl with ,the tomatoes, kiwi fruit and herbs. Pour over the dressing and loss well.
Spoon the mixture into the melon shells and qn inkle with pumpkin seeds, if using.
