Mangetout Salad
225 g/8 oz mangetout peas
1 tablespoon sesame seeds
1 red pepper, cored, deseeded and finely sliced
4 tablespoons French dressing
Top and tail the mangetout and, if large, cut in half diagonally. Dry fry the sesame seeds over gentle heat, shaking the pan, until golden.
Place all the ingredients in a bowl and toss thoroughly. Turn into a shallow serving dish. SERVES 4
