Lamb's Lettuce Salad


225 g/8 oz lamb's lettuce, washed
1 head radicchio
1 head chicory
1/2 bulb fennel
few dandelion leaves, halved (optional)
2 tablespoons chopped parsley
50 g/2 oz walnuts
6 tablespoons French dressing


Remove the roots from the lamb's lettuce and place the leaves in a salad bowl. Tear the radicchio


into manageable pieces and slice the chicory into


1 cm/1/2 inch pieces. Slice the fennel very thinly.


Place the lamb's lettuce, radicchio, chicory and fennel in the salad bowl with the dandelion leaves (if using), parsley, walnuts and French dressing, and toss thoroughly.


SERVES 6 to 8
