Greek Salad


1 Cos lettuce, washed
1/2 cucumber, peeled 4 tomatoes, skinned
8 spring onions, trimmed
1 x 50 g/2 oz can anchovy fillets
1 tablespoon chopped fresh basil or 1 teaspoon
dried basil
225 g/8 oz Feta cheese
6 tablespoons lemon vinaigrette dressing


Shred the lettuce and arrange on a large platter or shallow serving dish.


Cut the cucumber into 2.5 cm/1 inch lengths and arrange on top of the lettuce.


Slice the tomatoes thinly and arrange round the edge of the platter.


Chop the spring onions. Drain the oil from the anchovies and cut them into small pieces. Sprinkle the spring onions, anchovies and basil over the salad.


Cut the Feta cheese into small dice and pile on top of the salad. Pour over the dressing and serve. SERVES 4
