French Bean, Tomato And Pepper Salad
225 g/8 oz French beans, trimmed
Pinch of salt
1 large red pepper, cored, deseeded and chopped
4 large tomatoes, skinned and quartered
1 tablespoon chopped basil or oregano
6 tablespoons lemon vinaigrette dressing
Cook the beans in boiling salted water for about 12 minutes, until just tender. Drain and cut the beans in half.
Blanch the red pepper in boiling water for I minute, then drain. Place the beans in a salad howl with the pepper and tomatoes. Carefully mix to gether and sprinkle over the basil or oregano. Pour over the lemon vinaigrette and chill in the refrigerator before serving.
