Cucumber Mould
15 g/1/2 oz powdered gelatine
250 ml/8 fl oz lemon juice
250 ml8 II oz hot water
1 cucumber, peeled and sliced
225 g/8 oz white grapes, deseeded
Sprinkle the gelatine on to the lemon juice and allow to soften. Add to the hot water and stir until the gelatine has dissolved.
Arrange about half the cucumber slices in a 19 cm/71/2 inch mould with the grapes. Pour over the lemon jelly mixture. Arrange the remaining cucumber slices on top of the mould. Place in the refrigerator or a cool place and leave to set for about 3 hours. Turn out and serve.
