Cucumber And Tomato Raita
1 small or 1/2 large cucumber, sliced
1/2 teaspoon salt
4 tomatoes, thinly sliced
300 ml/1/2 pint plain low-fat yogurt
2 tablespoons chopped mint freshly ground white pepper
Put the cucumber in a colander, sprinkle with the salt and leave to drain for 30 minutes.
Dry the cucumber with kitchen paper and place in a serving dish with the tomatoes. Mix the yogurt with the chopped mint and pepper to taste, then pour over the salad. Serve chilled.
