Christmas Salad
175 g/6 oz red or white cabbage, washed and
shredded
2 large carrots, peeled and grated
2 dessert apples, cored and chopped
2 celery stalks, chopped
100 g/4 oz dates, stoned and chopped
50 g/2 oz sultanas
100 g/4 oz shelled nuts (Brazils, walnuts,
almonds, hazelnuts), chopped if large
2 tangerines or oranges, peel and pith removed
and divided into segments
100 g/4 oz Stilton cheese, diced
150 ml/1/4 pint salad dressing (yogurt, fruit juice
or vinaigrette)
salt
freshly ground black pepper
Place all the ingredients in a salad bowl, and toss well to mix. Taste and adjust the seasoning and serve very cold.
If not to be used immediately, store in an airtight container in the refrigerator. The salad will keep fresh for several days.
