Chinese Cabbage And Cucumber Salad
2.5 cm/1 inch piece root ginger, peeled and
finely chopped
4 tablespoons French dressing
1 Chinese cabbage
1/2 cucumber
100 g/4 oz bean-shoots
6 spring onions, chopped
1 tablespoon chopped parsley, to garnish
Mix the ginger with the dressing and leave for 30 minutes. Shred the Chinese cabbage and cut the cucumber into julienne strips. Place all the ingredients in a bowl and toss thoroughly to combine with the dressing. Transfer to a serving dish and sprinkle with the parsley.
