Chicory And Fruit Salad


5 heads chicory, trimmed and thinly sliced into
rings
2 celery hearts, trimmed and thinly sliced into
rings
4 oranges, peeled and segmented
225 g/8 or seedless white grapes
225 g/8 or black grapes, halved and deseeded
2 bunches watercress, trimmed
100 g/4 oz button mushrooms, wiped and thinly
sliced
Dressing:
4 tablespoons polyunsaturated vegetable oil
1 tablespoon orange juice
2 teaspoons lemon juice
2 spring onions, trimmed and thinly sliced
salt
freshly ground black pepper


Toss together all the chicory, celery, oranges, grapes, watercress and mushrooms.


Mix together all the ingredients for the dressing, with salt and pepper to taste.


About 1 hour before serving, pour the dressing on to the salad and toss to mix well.


SERVES 6 to 8
