Chicory And Cucumber Mould


1 or 2 heads chicory
225 g/8 oz curd cheese
1 cucumber, peeled and sliced
1 bunch spring onions, trimmed and finely
chopped
15 g/1/2 oz powdered gelatine
75 ml/3 11 or water


Separate the chicory leaves. Put the curd cheese, cucumber and onions in a blender.


Sprinkle the gelatine over the water in a teacup, stand the cup in a bowl of hot water and stir until dissolved. Add the dissolved gelatine to the mix-


cure in the blender and liquidize until smooth. Pour into a deep 18 cm/7 inch cake tin with a spring clip.


Put the chicory leaves round the inside edge of the tin in an upright position so that they form a circle enclosing the curd cheese mixture. Place in the refrigerator or a cool place and leave to set for about 3 hours. Carefully release the spring clip and lift off the tin.
