Cheese And Bread Salad
150 ml/1/4 pint vinaigrette dressing
2 slices or crusts wholemeal bread, diced
100 g/4 oz Cheddar or Edam cheese, diced
100 g/4 oz Mozzarella cheese, diced
4 tomatoes, sliced
10 cm/4 inch piece cucumber, sliced
1 x 50 g/2 oz can anchovy fillets, drained
8 olives, halved and stoned
1 lettuce
Pour the dressing into a bowl. Add the bread and toss to coat thoroughly. Add all the remaining ingredients, except the lettuce, and told together gently to mix.
Line a serving dish or bowl with lettuce leaves, then pile the salad in the centre. Pour over any remaining dressing. Serve cold.
