Cauliflower With Egg


1 small cauliflower, broken into florets
salt
3 hard-boiled eggs, chopped
150 ml1/4 pint Roquefort dressing
1 tablespoon snipped chives


Blanch the cauliflower in boiling salted water for 2 to 3 minutes; drain and leave to cool completely.


Place in a bowl, add the eggs and dressing and toss thoroughly. Transfer to a serving dish and sprinkle with the chives.


SERVES 6
